  • Do You Boos!: The ratio of caramel to popcorn will determine how saturated each kernel is. The fewer kernels used, the more caramel coverage you’ll get. The popcorn you see pictured in the photos has medium caramel coverage, meaning there are visible white splotches studded throughout. Medium to light coverage caramel popcorn is definitely still as sweet and indulgent as ever. Full coverage caramel corn is super sweet! So, depending on your personal preference, adjust the measurement of kernels. 

How to Store Caramel Corn Popcorn

Leftovers are best stored at room temp in airtight containers or sealable freezer bags. Caramel corn popcorn will stay fresh this way for up to two weeks. If you let air get to it, the flavor can turn stale boos so try to avoid that so it stays fresh and crisp.

I don’t recommend adding leftover popcorn to the fridge or freezer since you don’t want to introduce moisture. It will result in it losing it’s super crispy texture. Fresh is best boos.

  • 1 cup pecans

  • Preheat the oven to 350 degrees. Spread the pecans on top of a baking sheet. Toast the nuts for 8-10 minutes, tossing halfway through.
  • Transfer the nuts to a heat-safe bowl and allow them to completely cool.
  • While you wait, use a blender or food processor to grind up the cookies. Once cool, chop up the pecans.
  • In a large bowl, combine the wafer cookies, pecans, 1 cup of powdered sugar, cocoa powder, ground cinnamon, ground ginger, and nutmeg. Mix thoroughly.
  • Add the bourbon and corn syrup. Mix until the dry and wet ingredients are fully combined.
  • Use a tablespoon measurement to form the balls, then roll them in the remaining ½ cup of powdered sugar.
  • Chill for 1 hour and serve!

    Each holiday season, I get into my candy making bag. I guess you could say I have a little SGGA (Severe Gift Giving Anxiety). Fortunately for me, when I started giving out these bomb New Orleans style pralines, everyone went crazy so now it’s basically a tradition. If you’ve ever had these in NOLA, you know how special they are, and that taste is hard to replicate. This recipe shared from my friend Toni Tipton Martin’s Jubilee will get you as close as possible to the classic right at the crib.

    What are Pralines?

    Pralines are simply a classic Southern candy made from brown sugar and pecans from New Orleans. They’re crunchy from the nuts yet slightly chewy with a melt in your mouth texture. Pralines are wonderfully complex and simple all at the same time boos.

    You would think something as indulgent as pralines would require all dang on day to make but they don’t. In fact, you can have these prepped and cooling to perfection in less than 30 minutes.

    No twists and remixes here. We are making a homemade praline recipe that’s authentic and doesn’t play around.

    These homemade pralines are such a great gift to give during the holiday season or just because! Nothing says you care like a bag of these boos.

    Ingredients you’ll need to make this Praline recipe

    Brown sugar and white sugar, pecans, butter, vanilla in white bowls on white background to make praline recipe
    • Brown Sugar and Granulated Sugar: Both of these sugars give our pralines recipe a deep, caramelized soul and classic sugary base.
    • Molasses: This gooey liquid is a wonderful sweet and sticky binder holding all our ingredients together.
    • Heavy Whipping Cream: We gotta get those pralines super creamy and silky.
    • Butter: Ain’t nothing richer or more flavorful than this. You gotta have it!
    • Toasted Pecans: We toast them up for additional flavor building. They give us texture from that wonderful crunch.
    • Salt: Just a touch is needed to balance out the sweetness and elevate those flavors.
    • Vanilla Extract: We add just a dash to bring some warm, aromatic essence.

    How to make Pralines

    Add brown sugar, granulated sugar, molasses, and cream to a medium saucepan.

    Get to stirring everything together over medium heat with a wooden spoon until the sugar dissolves.

    Time for boiling action! Cook for about 5 minutes. You’re looking for a thicker consistency. Do the cold water test by dropping a tiny bit into a bowl of cold water – you want it to form a soft ball. Or if you use a candy thermometer, aim for 240F.

    Stir in butter, pecans, salt, and vanilla off the heat. Stir like you’ve never stirred before.

    Continue to Stir vigorously until nice and thickened up, about 2 to 3 minutes.

    Scoon heaping tablespoons of the mixture onto the lined baking sheet.

    Allow the pralines to chill out until they have set up and are cooled completely. Could take up to 45 minutes.

    What to serve with praline pecans

    Recipe Substitutions

    • Brown Sugar: If you ran out, you can make your own brown sugar with granulated sugar and some of the molasses you need for the recipe.
    • Molasses: The best substitute for this is dark corn syrup. Light corn syrup or maple syrup can also be decent replacements.
    • Heavy Cream: Half-and-half is my first suggestion for a substitution. Evaporated milk can be used as well.
    • Pecans: Almonds and walnuts are legit in this recipe as well. Don’t forget to toast them up before adding to the praline recipe.

    Recipe Variations and Additions

    • Vegan: Replace the butter with a good quality plant-based butter substitute like Earth Balance and swap out the heavy cream for a thicker coconut cream, coconut milk or oat milk for a more neutral taste.
    • Boozy Twist: Add some flare by mixing bourbon or rum into your liquid mixture. It hits every time for my adult boos!
    • Spice it Up: Toss your pralines in cinnamon and chili powder while they’re still sticky. It adds a unique warmth and flavor profile to the sweetness.
    • Add Chocolate: Adding some melty chocolate chips to your praline mixture before you remove from the heat is a bomb remix.
    • Zest it Up: Sprinkling just a little lime or orange zest to the heated praline mix freshens and brightens up the caramel flavor.

    Expert Tips and Tricks for making the best pecan pralines

    1. Work in a Cool, Dry Area: Humid air will usually prevent your pralines from properly hardening so keep it cool boos.
    2. Balance is Key: Beat your candies too little and they’ll be soft and runny. Go too hard and they’ll be so crumbly that they fall apart at your touch.
    3. Get that Candy Thermometer out: When you need to make sure that sugar syrup is right on the money, use this. It will help you get perfect praline consistency each and every time.
    4. Work Quickly: Once that homemade praline mix is ready to go, work as quickly as possible to drop them on your prepared baking sheet. They cool and start setting up super fast.

    How to store & reheat pralines

    Cool your homemade pralines down completely. They should be totally set before you store them up. Use parchment paper in between stacks of pralines so they don’t stick together. They can be kept at room temp and will last about a week boos.

    How long will this praline recipe last in the fridge?

    No need to refrigerate traditional pralines y’all. They keep well at room temperature so that texture stays on point.

    Can I freeze pecan pralines?

    Yep for sure boos but the texture can change slightly once you thaw them. Just fyi. Wrap each individually in plastic wrap and toss in a ziptop bag removing all air. They can stay in the freezer for up to 2 months.

    Do I have to have a candy thermometer to make these pralines?

    Not necessarily but it is very helpful y’all. I find that when I am making candies, being exact with the temperature can make all the difference in creating the perfect texture. However if you don’t have one, just use the soft ball stage cue. You will know the praline mixture is all good when it thickens and forms a soft ball when a small amount is dropped from a spoon into a bowl of cold water. That takes roughly 5 minutes.

    Help! My pralines are hardening too fast!

    If you find that your pralines are hardening before you can scoop them out of the pan, it’s not the end of the world boos. Add a teaspoon of hot water at a time to the mix and stir until your candy loosens up again.

    Why are my pralines grainy?

    It’s more than likely from sugar crystallizing. Make sure you are stirring that mixture consistently while scraping down the side of the pot to get those crystals back in the mix.

    • Bring to a boil and continue to cook for about 5 minutes, until the mixture begins to thicken and form a soft ball when a small amount is dropped from a spoon into a bowl of cold water, about 5 minutes. (Or using a candy thermometer; the temperature needs to reach 240F.) . Be very careful through this process, as the mixture is very hot and can burn severely.
    • Remove the pan from the heat and use a wooden spoon to stir in the butter, pecans, salt and vanilla. Continue to stir vigorously until thick, 2 to 3 minutes. Working quickly, spoon heaping tablespoons of the mixture onto the lined baking sheet. Allow the pralines to cool completely. Store in an airtight container.

    If you prefer flat pralines, replace cream with 1 cup of milk.  Also you can replace molasses with dark corn syrup and keep the cream for thicker chewier pralines.

    How to make Old-fashioned divinity

    1. Place egg whites in the bowl of a stand mixer fitted with the whisk attachment. Set aside.
    2. In a heavy-bottomed medium saucepan, place sugar, corn syrup, and water. Stir gently together until all sugar has been hydrated, careful not to slosh the mixture on the sides of the pot. Cook.
    3. Whip egg whites. Once foamy, add cream of tartar. Slowly add the remaining sugar, then increase speed until the mixture thickens and becomes white in color.
    4. Slowly add hot syrup into the bowl while whipping egg whites, careful to aim right between the whisk and sides of the bowl.
    5. Add salt, vanilla, and maple. Continue whisking on high until the mixture looks like a marshmallow and starts to lose its shine.
    6. Reduce speed and add cooled pecans and continue whisking for another minute. The mixture should be extremely white and fluffy with a dull sheen and should fall off the whisk into thick ribbons.

    • Avoid stirring during boiling: Once the syrup starts boiling, resist the temptation to stir it. Stirring can cause crystallization and lead to grainy candy. While the syrup is boiling, periodically brush down the sides of the saucepan with a pastry brush dipped in water. This prevents sugar crystals from forming on the sides, which can cause crystallization in the whole batch.
    • Pour the syrup in a thin stream: When adding the hot syrup to the whipped egg whites, pour it in a thin, steady stream while continuously beating the egg whites. This ensures even incorporation and a smoother texture.

    • 1 tablespoon Confectioner’s sugar
    • 2 large egg whites room temperature
    • 2 cups granulated sugar divided
    • ½ cup light corn syrup
    • ¼ cup water
    • ½ teaspoon cream of tartar
    • ½ teaspoon fine sea salt
    • 1 teaspoon pure vanilla extract
    • 1 tablespoon pure maple syrup
    • 1 cup pecans chopped, toasted

    Instructions

    • Prepare sheet pan with parchment paper and sift confectioners’ sugar over surface. Gather either two tablespoons or a #60 disher in a small bowl in preparation for scooping.
    • Place egg whites in the bowl of a stand mixer fitted with the whisk attachment. Set aside.
    • In a heavy-bottomed medium saucepan, place 1 ¾ cup sugar, corn syrup, and water. Stir gently together until all sugar has been hydrated, careful not to slosh mixture on sides of pot.
    • Cook on medium-high heat until mixture reaches 260F, about 8-10 minutes.
    • Meanwhile, when your syrup reaches about 230F, whip egg whites on medium-high speed for about 1 minute. Once foamy, add cream of tartar. Slowly add remaining ¼ cup of sugar, then increase speed to high until mixture thickens and becomes white in color. The goal is to reach soft peaks in your egg whites and have your syrup reach 260F at the same time.
    • Carefully pour syrup into bowl with whipping egg whites, careful to aim right between the whisk and sides of the bowl. Add salt, vanilla, and maple.
    • Continue whisking on high until mixture looks like marshmallow and starts to lose its shine. Reduce speed and add cooled pecans and continue whisking for another minute. Mixture should be extremely white and fluffy with a dull sheen and should fall off the whisk into thick ribbons and take time to absorb back into the rest of the mixture. If it absorbs quickly, continue whisking.
    • Add hot water to the bowl with your disher or spoons. Quickly scoop tablespoon-size portions of divinity onto prepared sheet pan, continuing to dip in hot water in between every couple scoops. Mixture will set up as you scoop.
    • Let mixture set in cool, dry space for 4 hours. Divinity can be stored in an airtight container for 4 days.

    Notes

    Note: Egg whites whip up best when free from fat, so ensure your mixing bowl and whisk are super clean (no traces of oil) and carefully separate the eggs making sure not to get any trace of yolk in the whites.

    Growing up, there was never much candy in our home. Instead of the occasional Laffy Taffy or handful of M&Ms, we had leftover peach cobblers or blueberry buckles. Don’t get me wrong, there were always Halloween hauls and Christmas stocking goodies (which I hoarded for as long as I could) but that was the extent of my candy connoisseur career. Hard to believe, I know!

    These days, things haven’t changed much. I still don’t eat much candy, unless there are Turtles around. Crunchy, buttery, salty and sweet, Turtle Candies are my go-to homemade confection!

    What are Turtles?

    It was in 1916, in the Windy City of Chicago, that George DeMet brought the turtle to life! Made with rich milk chocolate, buttery caramel and nutty pecans, Turtles became a quick-hit with DeMet’s customers. With its round and slightly bumpy shape, pecans imitated the look of a real turtle which made for a fun, exciting new variety of candy.

    Today, over a 100 years later, DeMet’s Turtles sell over 81 million candy products a year! We’re talking about 7,000 tons of chocolate and 13,000 tons of nuts, crazy right? Folks just can’t seem to get enough of these rascally reptiles.

    Ingredients

    Made with less than 5 ingredients, these Turtle Candies make for the perfect night-cap, midday treat or potluck offering. During the holidays, I make a few batches of these bad boys and offer them up in goodie bags to loved ones. I mean, who doesn’t like a sweet treat made from the heart?

    Here’s what you’ll need:

    • Caramels– any store-bought caramels will work but I chose to use Werther’s Chewy Caramels. Smooth and chewy, these caramels make for an incredibly sticky-sweet bite!
    • Evaporated Milk– evaporated milk is unsweetened milk thickened and concentrated by the evaporation of water content. Its addition gives body and richness to our caramel while also offering up a bit of extra sweetness.
    • Pecan Halves– these can totally be made using cashew, peanuts or even almonds! You won’t get that classic turtle look but this can be a great opportunity to use what you’ve got on hand.
    • Milk Chocolate Chips– because there are so few ingredients, it’s important to use high-quality chocolate. I chose to use Guittard Milk Chocolate Chunks for the ultimate creamy, chocolatey goodness. Lindt, Ghiradelli and Baker’s are also great options!
    • Flaky Sea Salt (Optional)– I like to finish off Turtles with a light sprinkle of Maldon Flaky Sea Salt. Not only does sea salt look fancy but, dang, that salty bite is crazy good!

    TIP: Want to take these to the next level? Toast your pecans! Taking this extra steps adds a deep, roasted flavor that can’t be beat. Just place the pecans on a cookie sheet and bake at 350 degrees for about 10 minutes. Allow to completely cool before shaping and spooning on the caramel.

    How to Make Turtle Candy

    Step 1: Caramel Me Crazy! First up, we’ve gotta get our caramel on point! Take your caramels and milk and give them a cozy hot tub experience in a double boiler over some simmering water. Keep that mix stirring for about 10 minutes until you’ve got a smooth, dreamy pool of caramel. Patience here, candy rockstars, we want perfection!

    Step 2: Nutty Buddies While your caramel is cooling down just a tad, it’s time to get nutty! On a sheet of wax or parchment paper, start assembling your nut crews in groups of three. They’re about to get a sweet caramel blanket, but you wanna leave the tips sticking out like they’re sunbathing in that sweet, sweet sun. Spoon that luscious caramel over your nut trios, then let them chill out and set for about 30 minutes.

    Step 3: Choco-lot of Love Now, let’s melt some hearts… I mean, chocolate! You can go old-school by melting your chocolate over hot water (just like the caramel) or use the microwave for a quick and easy melt-down. Once it’s all smooth, let it cool to room temp. We’re talking cool enough so that it’s spreadable but not solid – we still want it to be pourable, folks!

    Step 4: Assembly Time! Okay, now for the grand finale: Spread that heavenly chocolate over your caramel-nut creations like you’re painting a masterpiece (because you are). Let them set and – voilà – you’ve got Turtle Candies!

    Storage

    Room Temperature: Short-Term Sweet Spot Got your candies wrapped up in a love affair with wax or parchment paper? Perfect, they’re ready for a short stint at room temperature. Place them in an airtight container, making sure they’re in single layers separated by parchment paper to avoid a sticky situation. They’ll be good for about a week in a cool, dark place. No need to refrigerate if you’re planning on devouring them soon!

    Refrigerate: Cool Runnings If your house runs warm or you’re a fan of a firmer bite, pop your container of Turtle Candies into the fridge. They’ll stay fresh and fabulous for up to 3 weeks. Just give them some time to warm up a bit at room temperature before serving – nobody wants a tooth-chilling bite!

    Freeze: For Those Who Plan Ahead Long-term candy hoarders, we’ve got you! Freeze your Turtle Candies by placing them in freezer bags or airtight containers with parchment paper between layers. These sweet treasures will keep for up to 3 months in the freezer. Remember to thaw them in the refrigerator and then bring them to room temperature before serving for the best flavor experience.

    Pro Tip: Stay Dry, Stay Fresh Humidity is the nemesis of Turtle Candy. Keep ’em dry, and you’ll avoid a soggy catastrophe. Always ensure your storage containers are air-tight, whether you’re using bags or bins.

    To be honest, I’ve never been a huge candy-girl. I’ll take a massive slice of homemade pound cake over a Snicker’s bar any day. But, as a baker, I love taking inspiration from sweets and turning them into something of my own!

    Turtle Candy

    ‘Tis the season of holiday baking, gifting and décor! Y’all just know I can’t resist sharing tons of fun tips and recipes for your own festive celebrations. And this year, I am WAY too excited about this holiday dessert charcuterie board.

    Holiday parties are fun but can also be exhausting if you’re stuck hosting them. This is where cheese boards, charcuterie plates and this holiday snack platter come in handy. Boards allow you to pick and choose what you want to eat and how much of it to consume. If you want an entire board of cookies and cheese, that’s your business.

    If you’ve been stressing over what to bake for your holiday parties these next couple of weekends, I’ve got you covered. Skip the hot oven, shop the pantry and make this Montchevre Holiday Dessert Board instead!

    What is a Dessert Charcuterie Board?

    A charcuterie board, simply put, is a platter or board filled with snacks. All snacks are arranged on a board (a cutting board, marble slab, wooden cheese board, etc.), a large baking sheet or a short-sided open box.

    A savory board will usually include items like cheese, deli meat, crackers, jams and nuts. A dessert board is exactly like a savory charcuterie board except that it leaves room for items that are on the sweeter side.

    The best part about a charcuterie board is its customizability! Want to throw on a few pickles? Do it. In the mood for peanut butter cups? Throw ‘em on!

    Today’s board is a creation of my own sweet-salty obsessed madness. Using a mixture of savory components, funky sweets and fresh fruit, I architected the ultimate little-bit-of-everything holiday dessert (or appetizer or snack or, whenever you please) charcuterie board!

    Why Serve Dessert Boards?

    Charcuterie boards are a major holiday game changer! Boards are a WILDLY easy way to make a beautiful dessert for a big crowd and, because there’s such an incredible assortment of food, it’s guaranteed to please everyone.

    A board like this doesn’t require a lot of effort. Buy some items, make some items and bust out a few random pantry finds. It’s a busy time of year and, y’all, I don’t always have time for all that cookie-baking, pie-crust filling mess! I know you feel me on that.

    Building your board

    Let’s do ourselves a favor and start with the good stuff, shall we? Building a charcuterie board is equivalent to letting a kid loose in the candy store. I mean, we’re talking snacks on snacks on snacks. Each one a treat of your own choosing. I could eat one of these bad boys anytime, any day!

    Gather Your Fruit

    Fruit on a charcuterie board is a must. Assorted fruit adds color, acidity, moisture and straight-up fun. Try to include both crisp and softer options. Dried fruit can be mixed in here too!

    Start out with a few of my favorites and add in more of your own:

    Sliced Pears & Apples
    Figs (you can even dip them in chocolate if you can find them)
    Red or Green Seedless Grapes
    Kumquats
    Sugared Cranberries
    Pomegranate
    Dates

    Choose Your Spreads & Cheeses

    Aim to create a balance between sweet and salty with your sauces, dips and cheeses. You want a solid mix of brininess, sweetness and sharpness. If you’re struggling with this part, think about combinations, create mental pictures and try to pair similar, complementary flavors.

    How to Make Cranberry Goat Truffles

    Now, there’s nothing wrong with going 100% store-bought when it comes to a charcuterie board. Been there, done that (a lot). But, being as extra as I am, I like to add a personal touch to my boards. Homemade truffles are a creamy, chocolatey delicious way to take things up a notch.

    Montchevre Cranberry Cinnamon Goat Cheese– this special edition holiday goat cheese is incredibly creamy and decadent. The added cranberries add bursts of tart yet sweet flavor. Cinnamon layers in warmth and zesty spice. You haven’t had goat cheese until you’ve had this.

    Cream Cheese– if you’re a fan of cheesecake, you’re gonna love these. Each truffle is like popping a chocolate-dipped cheesecake bite straight into your mouth. SO good.
    Vanilla Extract– vanilla is a flavor enhancer that always makes for a “dessertier” experience.
    Graham Cracker Crumbs– try to shoot for a mixture of large chunks and fine crumbs for a more balanced texture. What’s a cheesecake with a graham cracker crust?
    Dark or Semi-Sweet Chocolate (Melted)– both goat and cream cheese are quite rich; dark chocolate cuts through the fat and adds a sharp bite while still being rich and chocolatey. If you’re not a fan of dark chocolate, semi-sweet or milk will work, just expect a sweeter outcome.

    Building Your Board(Part Two)

    Alright, let’s get to the technical stuff, shall we? Think of building your board as a piece of art: create a vision, take your time and allow the fun, holiday spirit to take over. When I layer together a board, I look to add height, dimension, color and texture, just like one we have here today!

    Enough talk, let’s get this party started!

    Choose a Board

    First off, take inventory of what platters and trays you have on hand and decide what will work best displaying your treats. I find that large, rectangular cutting boards, baking sheets or cheese boards work best for large crowds.

    I recommend a board or dish with no raised edges. It’s easier to arrange ingredients on a flat surface.

    Place A Small Bowl on the Board

    Small bowls help to create levels and visual interest. Depending on the size of your board, add at least one small bowl for nuts, seeds or dips. Not only do these small bowls add height to your board, but they also serve as an anchor you can arrange other ingredients around.

    Don’t Overcrowd!

    Avoid the temptation to pile ingredients on top of each other! Start with flat ingredients like crackers, cookies, and sliced fruit (think pears, apples, etc.), and fan them out across different areas on the board. Fill open gaps with smaller items like cheese, herb sprigs, small fruit or jam jars.

    Remember, you can always replenish as the party goes on, so don’t feel like you have to overcrowd your board with every treat at the beginning. Give the people something they wanna keep coming back for!

    What to Serve

    Ingredients

    • 4 oz cream cheese room temperature
    • 4 oz Montchevre cranberry cinnamon goat cheese room temperautre
    • 1/4 cup granulated sugar
    • 1/2 tsp vanilla extract
    • 1/2 cup graham cracker crumbs
    • 8 oz milk or semisweet baking chocolate

    Instructions

    • In your stand mixer, mix cream cheese and cranberry cinnamon goat cheese until smooth.
    • Add in the sugar, vanilla extract, and graham cracker crumbs.
    • Line a 9×13 sized baking sheet with parchment paper. Scoop 1 tablespoon sized balls of the mixture onto the cookie sheet.
    • Melt chocolate according to package directions. Dip each truffle in the chocolate, gently tap off the excess chocolate, then place on a parchment lined baking sheet.
    • Drizzle with additional chocolate in a decorative pattern if desired. Chill to set, about 10-20 minutes.

    Notes

    Feel free to use whatever goat cheese flavor you prefer.  Store in the refrigerator if not serving right away or you have any leftover.
