In reply to Diana Adu. Yep you can make it ahead and freeze it. Let it cool completely, pop in a freezer safe airtight container. It should last in the freezer about 3 months. Just thaw in the fridge overnight and heat over the stovetop until it gets back smooth and consistent.

I made this twice in one day and both times the sugar became rock candy hard, fortunately there was enough that wasn’t hard to use on the carrot cake cupcakes, we’re talking delish. But what did I do wrong to turn it hard, it hardened before all the sugar was melted???
