This was inexpensive, easy to prep and assemble, and soooo good! I just returned from a week in Paris where I carbloaded on croissants and bread and pastries like I was running a marathon, lol! I was looking for something light and healthy yet also satisfying to where I didn’t need a side or any bread. This fit the bill! and a nice switch up from the usual fall/winter squash soups. The mint and cilantro are harmonious in this and the smoked paprika and ginger gives it the right amount of heat. Thank you, Jocelyn!
